Almond paste Muffins

For 12 muffins:

1 7oz Almond paste
1 cup sugar
2 sticks (1 cup) butter
4 eggs
2 cups flour
1 teaspoon baking powder
1/2 cup milk
Optional : 1+1/4 cup / 1+1/2 cup milk chocolate chips

Melt the butter, in the meantime, in a medim bowl, crumble as much as possible the almond paste (lumps will melt during cooking unless they are too big).

Preheat oven to 390°F.

In the bowl, add the milk, eggs (I beat the mix between each egg, as with an omelette, I think it gives a better texture), baking powder, suger, melted butter and then flour.

Optional : you can add the chocolate chips.

Spread in a muffin pan (or a cake or others), cook for 20 minutes.

Enjoy !




Vanilla muffins

For 11 muffins:

2 + 1/4 cup flour
2 eggs
3/4 cup sugar
2-3 drops of vanilla extract
1 pinch of salt
1 + 1/4 cup milk
2/3 stick (2/3 cup) butter
2 teaspoon baking powder
Optional : 1+1/4 cup / 1+1/2 cup milk chocolate chips

Melt the butter, preheat oven to 390°F.

In a medium bowl, add the milk, eggs (I beat the mix between each egg, as with an omelette, I think it gives a better texture), vanilla, baking powder, sugar, salt, melted butter and then flour.

Optional : you can add the chocolate chips.

Spread in a muffin pan (or a cake or others), cook for 15 minutes.
